Togiharu Virgin Carbon Steel Gyuto 210mm

This is the knife I reach for every single day. Carbon steel takes a wicked edge and develops the most beautiful patina over time. It feels like an extension of my hand. Yes, it requires more care than stainless \u2014 you have to dry it immediately and oil it regularly \u2014 but the performance is worth every second of maintenance.

Staub 5.5-Quart Round Cocotte
Cookware$350 - $400

Staub 5.5-Quart Round Cocotte

My most-used piece of cookware, hands down. This enameled cast iron Dutch oven goes from stovetop to oven and makes everything from braises to bread. The black matte interior develops a natural nonstick surface over time, and the self-basting lid keeps everything impossibly moist. I have it in basil green and I love it unreasonably.

USA Pan Half Sheet Pan (Set of 2)
Bakeware$25 - $35

USA Pan Half Sheet Pan (Set of 2)

I go through sheet pans like nobody's business, and these are the ones I keep coming back to. The corrugated surface promotes airflow for better browning, they never warp in a hot oven, and they are practically indestructible. I own six of them and use at least two every day.

Thermapen ONE Instant-Read Thermometer
Tools & Gadgets$100 - $105

Thermapen ONE Instant-Read Thermometer

If you cook meat, bake bread, or temper chocolate, you need this thermometer. It reads in one second, it is accurate to within half a degree, and it has saved me from serving undercooked chicken more times than I care to admit. The backlit rotating display is a game-changer for checking roasts in a dim oven.

KitchenAid Artisan 5-Quart Stand Mixer
Appliances$350 - $450

KitchenAid Artisan 5-Quart Stand Mixer

A kitchen workhorse that has earned its permanent spot on my counter. I use it for everything from whipping cream to kneading bread dough to making pasta with the roller attachment. Mine is matte white and has survived seven years of almost daily use without a single issue. Worth every penny.

Microplane Premium Classic Zester
Tools & Gadgets$15 - $18

Microplane Premium Classic Zester

Such a small tool that makes such a big difference. I use this for citrus zest, fresh nutmeg, garlic (in a pinch), and hard cheeses. It produces this impossibly fine, fluffy zest that melts into batters and sauces. I've tried other brands and nothing else comes close to the sharpness of the Microplane blade.
