Brown Butter Apple Galette with Vanilla Bean Cream
If I could only bake one thing for the rest of my life, it might be this galette. The crust is made with brown butter, which gives it this nutty, toasty depth that regular pie dough just can't touch. Rustic, forgiving, and absolutely gorgeous straight out of the oven.
- 1.5 cups all-purpose flour (spooned and leveled)
- 10 tbsp unsalted butter (browned and chilled until solid)
- 4 tbsp ice water (add more if needed)
- 1 tbsp granulated sugar (for the dough)
- 0.5 tsp kosher salt
- 4 medium Honeycrisp apples (peeled and thinly sliced)
- 3 tbsp brown sugar (packed)
- 1 tbsp lemon juice (fresh)
- 1 tsp cinnamon
- 0.25 tsp nutmeg (freshly grated)
- 1 tbsp cornstarch
- 1 whole egg (beaten, for egg wash)
- 2 tbsp turbinado sugar (for sprinkling)

Pulse the flour, sugar, and salt in a food processor. Add the chilled brown butter in chunks and pulse until you see pea-sized pieces. Drizzle in ice water and pulse until the dough just holds together when pinched.

Turn the dough onto plastic wrap, press into a disk, and refrigerate for at least 1 hour (overnight is even better).

Toss the apple slices with brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Let it sit while you roll the dough.

Roll the dough into a rough 14-inch circle on parchment paper. Arrange the apples in the center, leaving a 2-inch border. Fold the edges up and over the fruit, pleating as you go. Don't fuss — the beauty is in the imperfection.

Brush the crust with egg wash and scatter turbinado sugar generously over everything. Bake at 400°F for 40 to 45 minutes until the crust is deeply golden and the apples are bubbling.
